Description
This lemon tahini dressing is a delicious light dressing which contains a few simple ingredients that is easy to make. Tahini dressing is simply a tahini paste mixed with water and flavored with fresh lemon juice and salt.

- 1/4 cup tahini paste (sesame oil)
- 3-4 tablespoons of water
- 1-2 tablespoons of fresh lemon juice
- 1/4 teaspoon salt
- 1 garlic clove crushed (optional).
Instructions

In a small bowl gradually add water over the tahini paste and stir together.

With a small utility whisk or a spoon mix tahini and water together.
- When you start mixing water with tahini paste the mixture will harden, gradually add more water as needed.

Keep mixing aiming for a smoother mixture. Then add lemon, and salt (adjust to taste).

Give it another mix combining everything together.
Notes
- Picking a good quality of tahini is critical, I recommend buying it from a Middle Eastern grocery store.
- When you start mixing water with tahini paste the mixture will harden keep mixing aiming for a smoother mixture.
- Tahini oil floats at the top of the jar similar to peanut butter, shake the jar well before using.
- If tahini dressing is used to pour over salad, you may need to make it lighter, adding water and adjusting the lemon and salt will make it more liquidy.
- Tahini dressing usually hardens at the bottom of the jar, you can scoop it out with a spoon and use it in the food processor mixed with hummus or soften it by adding water.
- If garlic or other herbs are added to tahini it should be consumed within 2-3 days after refrigerating.
