Zucchini with Parsley كوسا خرط

Ingredients

  • 1 tablespoon olive oil
  • 1 medium sweet white onion (chopped)
  • 4 medium size zucchini (chopped square size)
  • half bunch of parsley (chopped)
  • 1 teaspoon allspice
  • salt for taste

Instructions

  1. Heat olive oil in a pot
  2. Add chopped onions and saute them well with the olive oil.
  3. Keep stirring the onions on high heat until they become soft.
  4. Add the zucchini to the onions and stir everything together. Keep it on high heat for a few minutes.
  5. Turn the stove on medium and cover the pot. Make sure you check and stir every 10-15 minutes and until the zucchini turns soft.
  6. Add parsley, salt and allspice, stir everything together and cover it for few more minutes.
  7. Serve with pita bread
