The Best Vegan Quinoa Salad with Black Beans is so easy and quick to make, the perfect salad that you can use for a quick lunch or a fast meal. It's loaded with nutrients and plant-based protein, it's also gluten-free!

How to prepare Quinoa Salad!

Quinoa salad is incredibly easy to make, it takes up to 30 minutes to have it ready. Start by making the quinoa. Rinse quinoa well to get rid of any residue, then double the amount of quinoa with tap water. Once it starts boiling, cover it and turn on low heat. Let it simmer for 10 minutes.

While quinoa is cooking you can start by cutting all the veggies, and chopping cucumbers, and tomatoes. Then prepare the dressing.

Is quinoa salad healthy?

Quinoa salad is jam-packed with vegetables which includes plenty of vitamins. Paired with black beans, which are a great source of fiber and protein. On top of that, it includes olives and extra virgin olive oil which helps with fat-soluble vitamin absorption.

This salad includes everything you need in a full meal. The vitamins in the vegetables, the protein and fiber from the beans and the quinoa, and the good fat from the olive oil. It's a win-win not just because it's healthy it is delicious.

This salad can last up to 4 days in the fridge, just withhold from adding the basil until served. The delicate leaves of basil start to darken if stayed overnight in the fridge!

Description

The Best Vegan Quinoa Salad with Black Beans is so easy and quick to make, the perfect salad that you can use for a quick lunch or a fast meal. It's loaded with nutrients and plant-based protein, it's also gluten-free!


Ingredients

Scale
  • 1 cup cooked quinoa (½ cup uncooked with 1 cup water)
  • 1 cup (or 1 a can) black beans (rinse well to get rid of can residue)
  • 1 cup corn
  • 1 cup finely chopped Persian cucumbers
  • 1 cup finely chopped tomatoes
  • ½ cup sliced kalamata olives
  • 4 ounces chopped fresh basil

Dressing:

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 juice of a lemon
  • Salt

 

 


Instructions

  1. Rinse quinoa well, then add room temperature water set on high heat. Once starts boiling, cover and turn heat to low and let it simmer for 10 minutes.
  2. In a large bowl, add chopped tomatoes, chopped cucumbers, corn, beans, kalamata olives, and basil.
  3. Mix dressing well and pour over salad. Mix all ingredients well to integrate dressing with all the salad ingredients.
