Rock Cookies with Almonds and Cranberries Full of Flavor

This is a very simple recipe that literally takes about 20 minutes to prepare. These cookies are full of the winter holiday flavor with earthy spices, roasted almonds, and the sweetness from the dried fruit.

Christmas is only a few days away, if you are not done with your holiday cookies make sure to check this easy and quick recipe.

This is an old recipe that my mother often made. We grew up eating These Cookies not only during the holidays but all year round. These cookies are called rock because they’re shaped to look more like a rock.

However, I did make a few adjustments to this recipe from the original Rock Cookies and added cranberries and roasted almonds. I also felt like shaping them to look a bit more rounded.

Here is how to make rock cookies:

Start by mixing all dry ingredients, flour, spices, sugar, baking powder. Then add the dried cranberries and chopped almonds. Previously I roasted the almonds and then chopped them. Feel free to add extra flavor once roasted. Then add eggs, vanilla, and melted butter. Mix everything well together aiming for a doughy mixture. If the mixture is still sticky gradually add 1-3 tablespoons of milk or water to help create a dough that is easy to work with.

Once the mix is ready, with a big spoon scoop out a ball-shaped portion. Lay it on a lightly pre-greased baking sheet. Repeat this step by laying each cookie next to the other until the sheet is full. Or you can roll a small size ball in your hands and then flatten it aiming to make a small circle shape. Continue until all mix is done.

Rock Cookies

Place baking sheet in a preheated 370 degrees oven and bake for about 20-25 minutes or until cookies look golden brown. If you like your cookies to be crunchier bake for an extra 2-3 minutes.

Once cooled off store in an airtight container. Or can be frozen in a zip bag for a couple of months.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 3/41 cup of sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clove
  • 2 teaspoons baking powder
  • 1/2 cup unsalted butter (melted)
  • 3 eggs
  • 1 teaspoon vanilla
  • 23 tablespoons water or milk
  • 1 cup dried cranberries
  • 1 cup chopped roasted almonds

 


Instructions

  1. Preheat the oven to 370 degrees F.
  2. Start by mixing all dry ingredients: flour, sugar, cinnamon, clove, nutmeg, baking powder, then add cranberries and almonds.
  3. Add melted butter, eggs and vanilla continue to mix, and gradually add water or milk. Keep mixing until the mix is more like a sticky dough.
  4. With a tablespoon scoop out a ball-shaped portion of the mix and lay on a greased baking sheet, or around shape them like a circle. Continue this step until the baking sheet is full.
  5. Place the baking sheet inside the oven and bake for about 20-25 minutes or until cookies are more golden brown.
  6. Once cookies are cooled off, it can be stored in an airtight container for up to a week. Or in a zip bag in the freezer for up to 2 months.
  7. This recipe makes about 30-35 cookies.
