Freekeh with Vegetables nutty smoky flavor high in protein

It’s still lent season, and I was thinking of a vegan dish that I can share with you all. So I thought of making freekeh with vegetables. Freekeh is a grain that I have used before in other recipes, as in soups, meat, and chicken. But today I made it in this vegan recipe that includes vegetables.

Freekeh is an ancient whole grain that is well known across the Middle East. The grain itself is harvested while it is still green, then roasted and rubbed and that’s what gives it a nutty smoky flavor. Freekeh is high in protein and fiber and has much more flavor than quinoa or rice. It can be used in a variety of recipes, such as salads or an alternate for rice as with chicken or meat, and many other vegan options. how to make this simple vegan freekeh with vegetables

Soak freekeh with water for up to 15 minutes. I like to soak it before cooking, it helps to cook fast and don’t get sticky.

Meanwhile, start by sautéing one chopped onions with some olive oil until onions turn golden brown. Then add vegetables frozen or fresh are fine, whatever is available at home. Here I used fresh carrots, which I peeled and cut into small pieces and frozen peas. Add the carrots and peas over the sautéed onions and mix everything well together. Let the vegetables cook for about 10 minutes before adding freekeh.

Rinse freekeh from water and add over sautéed vegetables, integrate everything well together until freekeh is well coated with the olive oil and vegetables. Then pour boiled water, salt, and allspice. Once it starts boiling cover the pot and let it simmer on low heat for about 20 minutes.

Ingredients

Scale
  • One onion finely cut
  • 3 carrots peeled and finely cut
  • ½ cup of frozen peas
  • 1 cup of freekeh
  • 1 cup of boiled water
  • 2 tablespoons olive oil
  • ½ teaspoon allspice powder
  • Salt

Instructions

  1. Soak freekeh in water for up to 15 minutes.

  2. Sauté chopped onions with olive oil until onions turn golden brown.

  3. Add vegetables: carrots and peas over the sautéed onions, mix everything well together and cook uncovered for about 10 minutes with occasional stirring.

  4. Rinse freekeh from water and add over vegetables, integrate everything well together so that the freekeh is well coated with the oil and vegetables.

  5. Pour boiled water, salt, and allspice. Mix everything well. 

  6. Once it starts boiling, cover the pot and let it simmer on low heat for about 20 minutes.
