Green Fava Beans Salad High in Fiber and Protein

Since we are still in Spring season and it’s primarily the season for green fava beans. I wanted to share this new recipe that my sister shared with me recently. I love salads and I’m always looking for new ideas. Salads are considered part of my daily routine lol, I have to have a bowl of a salad every day and sometimes that can be my main meal for the day.

This is a very easy recipe and very healthy. Fava beans are loaded with an incredible amount of nutrients, they are also high in fiber and protein.

So this is the first time I try this recipe, my sister got it from her coworkers and though her kids don’t like cooked fava beans they loved this salad. I decided to try it myself and it turned out really good. It takes less than half an hour to prepare including cooking time.

How to make fava beans salad

First start by picking the stems from each side, as you do with any green beans. Then cut into square size, then wash well. Next, we need to boil the fava beans with water so they soften a bit and be ready for the salad. Keep in mind that there is no need for the beans to be fully cooked like in the sauteed recipe, but maintain a crunchy texture. Then place beans in a big pot and cover with water, add a pinch of salt, cover the pot and let them boil on medium heat for 10-15 minutes or until they soften. You can test it with a fork. Once done rinse water and place them on a strainer.

Meanwhile prepare the dressing, which will include crushed garlic, sumac, salt, cumin, lemon juice, olive oil. The recipe also includes green cilantro, however, I didn’t feel that green cilantro go well with fava beans so I decided not to add any it’s optional so feel free to add some.

It can last up to two days if stored in the fridge in an airtight container.

This recipe makes 4 servings.

Ingredients

  • 16 ounces chopped fava beans
  • 2 liters water or enough to cover the beans.
  • 1/4 cup olive oil
  • 2 crushed garlic cloves
  • juice of 12 lemon
  • 1/2 teaspoon sumac
  • 1/4 teaspoon cumin
  • salt
  • Green cilantro (optional)

Instructions

 

  1. First start by picking the stems from each side, as you do with any green beans.

  2. Cut into square size, wash well and rinse water.

  3. In a pot place chopped fava beans and cover with water, add a pinch of salt.

  4. Cover the pot and place on medium heat.

  5. Let them boil for about 10-15 minutes or until fava beans are softened, test with a fork.

  6. Once done rinse water and place them on a strainer.

  7. Meanwhile, prepare the dressing, mix crushed garlic, sumac, salt, olive oil, lemon juice, cumin.

  8. Once cooled off, pour dressing over fava beans and mix well. Adjust dressing to taste.  Salad is served cold or at room temperature.


Notes

This is a really innovative way to use green fava, i have never thought of using it as a salad, such a wonderful dish, thank you for sharing this recipe!
