Date Almond Balls

Date almond balls are a delicious and healthy snack, naturally sweetened with dates and packed with nutty goodness from almonds. They are perfect for a quick energy boost or a nutritious treat.

This quick recipe requires only four ingredients and can be made in just 10-15 minutes—a great snack for both kids and adults.

No-Bake Dates-Oat Balls

I'm always on the lookout for something easy, delicious, and healthy—something sweet but not overloaded with sugar. This is a perfect treat, that is so simple and quick to make.

Dates are a vital part of the Palestinian diet. They are enjoyed fresh, dried, and used in various traditional sweets such as maamoul (date-filled cookies), anise date cookies, or in this date and walnut cake, and this healthy dates with goat cheese and honey.

Dates are incredibly popular in Palestine; we love snacking on them all the time. We also have what’s called ajweh—pitted dates that are turned into a smooth paste, specially made for baking a variety of traditional Palestinian cookies.

Ingredients

  • Quick Oats – Finely cut and pre-cooked oats that are soft and full of fiber.
  • Ajwah – Ajweh is essentially a pre-made date paste, commonly used in Middle Eastern cooking and baking. It's a convenient shortcut compared to pitting and blending Medjool dates yourself, and it's often found in grocery stores that carry Middle Eastern products. This paste is perfect for making maamoul cookies, anise cookies, or sweetening desserts without the extra prep work.
  • Raw Almonds – Raw almonds with a crunchy texture, mild nutty flavor, and rich in healthy fats, protein, and vitamins.
  • Chia Seeds – Tiny, nutrient-dense seeds, packed with fiber, omega-3s, and protein for sustained energy.

Step 1 | Chop almonds and place all ingredients in a mixing bowl.

Step 2 | With your hands, combine everything well together until you form a sticky dough. Refrigerate for at least 30 minutes to firm up.

Step 3 | Scoop small portions and roll into bite-sized balls.

Variations and Substitutions

  • Chocolate Flavor – Mix in mini dark chocolate chips for extra indulgence.
  • Nutty Mix – Swap or mix almonds with walnuts, pecans, pistachios, cashews, or hazelnuts for different flavors.
  • Tahini – Add 1 tablespoon tahini for a creamy, sesame-infused taste.
  • Coconut – Add ½ cup shredded coconut into the mixture for extra coconut flavor.
  • Protein Boost – Add 1 tablespoon protein powder or hemp seeds for an extra nutritional punch.
  • Dates: Use figs, raisins, or dried apricots if dates aren’t available.
  • Medjool Dates: If ajweh isn’t available, you can use Medjool dates instead. Simply pit about 15-20 dates, chop them, and process them in a food processor until they form a smooth paste.

Storage

  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • If stacking, place parchment paper between layers to prevent sticking.
  • Store in a freezer-safe container or ziplock bag for up to 3 months.
  • If frozen let them thaw at room temperature for 5-10 minutes before eating.

Pro Tips

  • If you used Medjool dates and they're too dry, soak them in warm water for 5-10 minutes, then drain before blending. This makes them softer and easier to mix.
  • If the mixture is too sticky, add more nuts, seeds, to balance it out.
  • If the mixture is too dry, add a little coconut oil, nut butter, or water to help bind it together.
  • Lightly oil or wet your hands before rolling to prevent sticking.
  • If the mixture is too soft to roll, chill it for 10 minutes before shaping.
  • I prefer using quick oats instead of regular oats since this recipe doesn’t require baking or liquid, and the quick oats have a softer texture. I also highly recommend using organic oats, as conventional ones often contain glyphosate, a toxic pesticide used in herbicides.

Ingredients

Scale
  • 1 bag ajweh (dates paste) 13 oz or 15-20 Medjool dates
  • ½ cup of quick oats
  • ¾ cup of chopped raw almonds
  • 1 tablespoon chia seeds

Instructions

  1. In a bowl, combine ajweh (date paste), quick oats, chia seeds, and chopped almonds.
  2. Mix all the ingredients well with your hands until the mixture forms a dough-like consistency.
  3. Refrigerate for 20–30 minutes.
  4. Take small portions of the mixture and roll them into bite-sized balls. If the mixture is too sticky, lightly rub your hands with olive oil.
  5. Repeat until all the mixture is rolled.
