Salads are one of my favorite foods and a staple in my daily meals. While side salads are great, a big, well-made salad can be a satisfying meal on its own. When done right, salads are fresh, healthy, and full of vibrant flavors. But what is the key to a great salad? The dressing. Without a good, delicious dressing, even the freshest ingredients can fall flat.

This maple tahini dressing is becoming a favorite. Its rich, nutty flavor comes from tahini, balanced with the bright acidity of apple cider vinegar and lemon juice, plus a touch of natural sweetness from maple syrup. The result is a smooth, complex dressing that pairs beautifully with many salads. And the best part is that it can be done in less than 5 minutes!

Here are a few salad recipes that I think this dressing pairs well with: kale and pomegranate salad, arugula and pair salad, freekeh salad with grilled cauliflower, or maftoul salad.

What is Tahini?

Tahini, also pronounced tahina, is a Middle Eastern condiment with a nutty flavor made from toasted ground hulled sesame. Tahini is considered a major ingredient in hummus and baba ghanoush, which are popular not only in the Middle East but are becoming more mainstream side dishes in the US.

Tahini can be used not only in savory dishes but also in sweets. It is considered an important ingredient in halva or used in making cookies or smoothies.

Tahini mixed with honey or fruit molasses is popular as a breakfast or dessert item in many parts of the Middle East, in a sort of variation on peanut butter and jelly.

Add two tablespoons of tahini to one tablespoon of grape molasses, mix well, spread over flatbread or toast, and enjoy. This is the perfect snack that I grew up eating, something that I can't have enough of.

Tahini has gained more popularity lately as a great option for those following a keto diet due to its healthy fats and nutrition facts.

Maple Tahini Dressing-Ingredients: tahini, maple syrup, applice cyder venigar, salt, lemon, water and olive oil
  • Sesame Oil (tahini) - It is important to find a good brand of tahini paste. Most Arabic brands are good and can be found at any store that sells Middle Eastern products.
  • Tap Water - to mix with tahini paste, which helps to make the dressing creamier.
  • Maple Syrup - A naturally sweet, caramel-like syrup with earthy undertones that gives this dressing a hint of sweetness without overpowering the overall taste.
  • Apple Cider Vinegar - This is a tangy, slightly fruity vinegar that brings brightness and balance to flavors. You can also use white or red vinegar.
  • Fresh Lemon Juice - gives the dressing a lemony, tangy taste.
  • Extra Virgin Olive Oil - Olive oil is a smooth, rich, and slightly peppery oil that adds depth and silkiness to dishes
  • Sea salt

Here is what I think this dressing pairs well with?

  • Salads that include roasted vegetables that have a touch of sweetness, like beets, butter nut squash, and sweet potatoes.
  • Grain Bowls – Pair with quinoa, farro, or wild rice with the roasted veggies mentioned above.
  • Roasted Vegetables – Toss with sweet potatoes, Brussels sprouts, or carrots.
  • Proteins – Roasted chickpeas or grilled salmon.

Pro Tips

  • Use High-Quality Tahini – Look for smooth, well-stirred tahini to avoid bitterness and graininess.
  • Whisk or Blend for Smoothness – Use a whisk or a blender for an ultra-creamy consistency. I prefer to whisk the tahini with water first—don’t be alarmed if it thickens initially. Add more Keep whisking, and it will turn smooth and creamy. If you prefer, feel free to use a blender for a silkier finish.
  • Thin it to Your Liking – Add water gradually to reach your preferred consistency, from thick dip to pourable dressing.
  • Balance the Flavors – Adjust the maple syrup, vinegar, and salt to get the right mix of sweet, tangy, and savory.

Storage

  • Refrigeration: Store the dressing in an airtight container or jar in the fridge for up to one week.
  • Separation is Normal: The dressing may thicken or separate over time—just stir or shake well before using.
  • Adjust Consistency: If it thickens too much, whisk in a little water or lemon juice to loosen it.
  • Avoid Freezing: Freezing can cause the tahini to become grainy and separate, so it's best enjoyed fresh.
